LOADED MASHED POTATO BALLS WITH BACON BITS RECIPE




Ingredients
  • 2 cups cold mashed potatoes
  • 1 egg, lightly beaten
  • 4 oz block cheddar cheese, cubed
  • ¼ cup chopped green onions
  • ½ lb bacon cooked, crumbled, divided
Instructions
  1. Mix mashed potatoes, green onion, and ¼ cup of the bacon crumbles.
  2. Shape mashed potatoes into 1 in. balls.
  3. Put a cube of cheese into the potato ball and press potatoes around it until cheese is completely covered.
  4. Roll into a ball.
  5. Dip the ball into the eggs, then dredge in the bacon bits.
  6. Place onto cookie sheet or baking dish.
  7. Bake at 375 degrees for 15- 20 mins or until cheese is oozing out.

Aromatic Thin Ribs with Root Vegetables Recipe




Ingredients: (Serves 4)

-215 g plain flour
-1 tablespoon chili powder
-6 single-rib thin ribs or 3 double-rib
sea salt and freshly ground black pepper
-3 tablespoons grapeseed or rapeseed oil
-2 onions, cut into 2.5 cm dice
-2 tablespoons finely chopped garlic
-45o g trimmed baby carrots, or peeled regular carrots, cut into chunks
-6 celery sticks, split lengthways and halved if large
-1 celeriac, peeled and cut into 2.5 cm dice
-1 large sweet potato, cut into 2.5 cm dice
-1 large parsnip, roll-cut into 2.5 cm pieces or cut conventionally
-2 tablespoons naturally brewed soy sauce

Method:
In a large shallow plate, combine the flour and chili powder. Season the ribs with salt and pepper and dredge in the flour mixture.
Heat a tall, wide saucepan over a medium heat. Add 2 tablespoons of the oil and swirl to coat the bottom. When the oil is hot, shake the excess flour mixture from the ribs, add them to the pan and cook, turning once, for about 8 minutes until browned. Set the ribs aside.
Add the remaining oil to the pan and swirl to coat the bottom. When the oil is hot, add the onions and garlic and saute, stirring, for about 3 minutes. Add the carrots, celery, celeriac, potato and parsnip. Season with salt and pepper. Add the ribs, soy sauce and enough water to almost cover the ingredients. Taste and adjust the seasoning, if necessary. Cover and cook over a medium heat for about 3 hours until a paring knife passes through the meat easily. (Quick rip: cook in a pressure cooker, over a medium-high heat, for 1 hour.) Transfer the ribs and vegetables to a large bowl and serve.

Jenny's Cheesy Stuffed Sausage Pasta Bake



Sausage + pasta + cheese = a delicious meal that the whole family will enjoy!
Ingredients
1 package Jimmy Dean® Regular Flavor Pork Sausage Roll
1 pound rigatoni or penne pasta
1 24-ounce jar spaghetti sauce
2 teaspoons dried Italian seasoning
1/4 teaspoon salt
1 container ricotta cheese
2 cups shredded mozzarella cheese, divided
3 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley, optional
How to Make it
1 Preheat oven to 350°F. Cook pasta and remove from heat 1 minute before suggested cook time; drain and set aside.
2 Cook and stir sausage in large skillet over medium-high heat 8 to 10 minutes or until thoroughly cooked. Drain and return to skillet. Stir in sauce, Italian seasoning, salt and cooked pasta. Layer half of pasta mixture in a greased 13x9-inch baking dish.
3 Mix ricotta and 1 cup of mozzarella and Parmesan cheese. Spread over pasta. Top with remaining pasta and mozzarella cheese. Sprinkle with parsley.
4 Bake for 30 minutes or until hot and cheese is melted.

Hasselback Maple Pecan Sweet Potatoes




It’s that time of year when the air gets crisp and we start craving all the tastes of fall: cinnamon, maple, nuts and, of course, sweet potatoes. So let’s put them together!
INGREDIENTS
2 medium sweet potatoes
1 tablespoon vegetable oil
Salt and black pepper, to taste
2 tablespoons butter, melted
1 teaspoon ground cinnamon
¼ cup chopped pecans
¼ cup maple syrup
½ teaspoon pure vanilla extract
½ teaspoon kosher salt
DIRECTIONS
- Preheat oven to 425 degrees Fahrenheit (218 degrees Celsius).
- Place a sweet potato between two chopsticks for stability and knife guidance. Every ¼-inch along the length of the sweet potato, slice ⅞ of the way through, or until the knife hits the chopsticks. (The chopsticks will help prevent the knife from cutting all the way through the sweet potato.) Repeat with the second potato.
- Brush the sweet potatoes with the vegetable oil. Place in a small baking dish and season with salt and pepper to taste.
- Bake the sweet potatoes for 30 to 40 minutes, or until soft.
- Remove the sweet potatoes from the oven, and increase the oven temperature to 450 degrees Fahrenheit (230 degrees Celsius).
- In a small bowl, combine the melted butter, ground cinnamon, chopped pecans, maple syrup, vanilla extract, and kosher salt. Stir to mix.
- Spoon the maple syrup mixture over and in between the baked sweet potato slices, pushing the pecan pieces in between each slice.
- Return the filled sweet potatoes to the oven and bake an additional 8 to 10 minutes.
- Remove the baked sweet potatoes from the oven and spoon any cooking liquid over the potatoes. Allow them to cool slightly before serving.

Tim Tam Balls





Easy & Delish with just 3 ingredients & 3 steps!

Ingredients:

- 200 g Tim Tams
- 395 g condensed milk
- 1 cup desiccated coconut

Directions:

STEP 1 Crush Tim Tams in a blender, fold in condensed milk.
STEP 2 Roll mixture into balls, then roll into coconut or grated chocolate.
STEP 3 Refrigerate until firm.

Crock Pot Brown Sugar Pineapple Ham






Ingredients:

1 Ham, precooked, spiral cut - bone in  or boneless, either will work.

3 1/2 Cups of brown sugar.

1/2 Cup raw natural honey.

1 20 oz can pineapple tidbits or chunks - do not drain.

Directions:

1- In a large crock pot, over 6 quarts or larger, cover the bottom with only 2 cups of the brown sugar.

2- Place Ham on top of the brown sugar, open the slices slightly with your hands

3- Pour the honey over the ham evenly

4- Add the pineapple arround the sides with the juice and some of top

5- Top with remaining 1 1/2 cups of brown sugar, making sure it is evenly distributed over the entire top of the ham.

6- Cover and cook on low for 4 1/2 to 6 houres.

Pizza Casserole





Ingredients





















Directions 


First, cook noodles according to package directions.

Preheat oven to 350 degrees F (175 degrees C).

Then and in a medium skillet over medium-high heat, brown the ground beef with the onion, garlic and green bell pepper. Drain excess fat. Stir in the noodles, pepperoni, pizza sauce and milk, and mix well. Pour this mixture into a 2-quart casserole dish.

Bake at 350 degrees F (175 degrees C) for 20 minutes, top with the cheese, then bake for 5 to 10 more minutes.

Best Ever Apple Pie

Directions

  First, preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.

  Then, place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.

   Fianly, bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.

  • Aluminum foil can be used to keep food moist, cook it evenly, and make clean-up easier.

Easy & Delish Buckeyes





Ingredients
  • 1½ cups peanut butter
  • 1 cup butter, softened
  • ½ teaspoon vanilla extract
  • 6 cups confectioners' sugar
  • 4 cups semisweet chocolate chips or chocolate candy coating

Directions
  1. Line a large tray or baking sheet with wax paper.
  2. In a large bowl, combine the confectioners' sugar, peanut butter,vanilla extract and butter, stirring until well blended.
  3. Roll the peanut butter mixture into 1-inch balls, and place the balls on a wax paper-lined baking sheet.
  4. Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.
  5. Melt chocolate chips in microwave (about 1 minute).
  6. Using the toothpick as a handle, dip each peanut butter ball in chocolate.
  7. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes.
  8. Place chocolate covered peanut butter balls on wax paper and remove the toothpick.
  9. Once the peanut butter has softened, you can use a finger to smooth over the hole from the toothpick.
  10. Refrigerate, until chocolate is set. Store in refrigerator until eating or gifting.

Mounds Bars with just 3 ingredients




Ingredients

1 cup Sweetened condensed milk
2 cups of Melted milk chocolate or dark chocolate
3 cups coconut flakes


Directions 

Mix the shredded coconut with condensed milk,mold into oblong shape, add them to freezer for 20 minutes and then dip them in melted chocolate.
Stick Almonds in them and have Almond Joys Be creative!

Easy & Delicious Christams Rul Balls




Ingredients


2 1/2 cups vanilla wafers, crushed (a 250g box of Christies vanilla wafers equals 2 1/2 cups)
2 tablespoons cocoa
1 1/4 cups icing sugar
1/2 cup spiced rum (the rum is called Spiced Rum) or 1/2 cup Bourbon
2 tablespoons white corn syrup (one brand is Karo)
1 cup pecans or 1 cup walnuts, broken
Method 
 1 Sift the cocoa with 1 cup sugar.
2 Stir in the spiced rum mixed with the syrup.
3 Add crushed vanilla wafers and nuts.
4 Mix thoroughly.
5 Shape mixture into walnut sizes balls and dredge with remaining sugar or leave them plain.
6 Store in a tin.

BAKED SPAGHETTI AND MEATBALLS




Ingredients

  • Meatballs (I used about 1½ doz homemade meatballs) **Meatballs were fully cooked
  • 24 oz jar marinara sauce (I used San Marzano Sauce)
  • ½ yellow onion (diced)
  • 3 cloves garlic (crushed)
  • 1 tsp Italian seasoning
  • 2 TBSP olive oil
  • ¾ # spaghetti noodles
  • 1-2 cups grated cheese (I used half colby-jack, half mozzarella)
  • ½ cup grated parmesa


Directions

  1. In large cast iron skillet, sauté onions in olive oil over med/low heat. Add in garlic and continue sautéing until onions are tender.
  2. Add cooked meatballs.
  3. Add marinara sauce and tsp Italian seasoning.
  4. Heat over med/low heat for about 20-30 minutes.
  5. In separate large pot, cook spaghetti noodles according to package directions (under cook by 2 minutes).
  6. With large slotted spoon, scoop meatballs from sauce and set aside.
  7. Scoop cooked spaghetti (with large slotted spoon) into marinara sauce. Add in about ½ cup pasta cooking water. Gently stir until pasta is fully coated with sauce.
  8. Add cooked meatballs to top of spaghetti.
  9. Top with grated cheese & parmesan cheese.
  10. Bake at 350* for approx 20-30 minutes or until hot and bubbly and cheese is melted.
